Is it almost turkey season? Yes, but this recipe isn’t the kind of turkey you were thinking and is something I made up four months ago when I was looking for an easy, simple and HEALTHY recipe.
This recipe is inspired by ‘lamb kheema’ which is a fragrant and delicious ground lamb dish, and a crossover with flavors of chicken and broccoli. Sound strange, just trust me on this one, okay?
What you will need : (Serves 2)
Olive oil – 2 spoons
Ground turkey ( I use the HEB 93% lean 4 oz. )
Half a white onion, diced
One carrot, diced
One cup of chopped broccoli
Cardamom – 3 or 4 pods
Bay leaves – 3 or 4 leaves
Curry powder – 3 to 4 spoons
Diced Garlic, I usually just buy it diced and eyeball how much I want to throw in.
Ginger paste- 2 spoons
Cayenne – 1 spoon (optional, if you like it spicy, I add 2 spoons)
Paprika, you know a pinch or two
Soy sauce 2 spoons
Salt
Honey – 2 spoons
Either lettuce scoops or a 1 cup of rice*
Okay ready? Get your big pan or pot out, heat up some olive oil, and sauté the garlic, ginger paste, cardamom, bay leaves and the onions together on a medium high flame. Add a pinch of salt.
Once onions are soft, 3-4 minutes in, add two spoons of curry powder and sauté for another 2-3 mins. Next, add in the ground turkey. Mix the ingredients in. Let it sit for about 5 mins and add more curry powder, cayenne, and paprika. Mix it together. Add soy sauce and honey. Throw in those veggies, yup, your carrots and broccoli. And cook for about 15-17 minutes, stirring every few minutes.
And there you have it! You can eat this either with lettuce scoops as wraps or with white rice (which is one of my favorite comfort foods)
