Yoghurt Rice with Spicy Okra

This is a traditional Indian recipe, no modifications really. We call “curd rice” but it’s the same concept. And it is delish!!

What you will need : 1 cup of cooked white rice
1 cup low-fat plain yoghurt
1 tablespoon mustard seeds

2-3 cut thai green chillies,
2 table spoons olive oil or any oil
1/2 diced onion
1 tablespoon paprika
2 cloves diced garlic
Salt to taste


How to – In a bowl, mix the cooked white rice with the yoghurt and add salt.
In a pan, heat the oil, add garlic, chillies, onion, mustard seeds and sautée for 4-5 mins till the onion is golden brown on medium heat. Then throw it on the rice in the bowl, and add the paprika, mix well. And add adjust the salt accordingly. Yup, that is all.

What you will need – 1/2 lbs Okra
1 medium potato
2 tablespoons paprika
1 tablespoon turmeric
1 tablespoon garlic powder
2 tablespoons olive oil
1 tablespoon cayenne pepper
Salt to taste
Cilantro

For the okra, I chopped them up vertically, along with the potato. Then in a bowl mixed together the oil, cayenne pepper, paprika, salt, garlic powder and turmeric. Mix it well. And then used the air fryer at 400 degrees F to cook for about 12-15 minutes till it looked crispy. (You can also use the oven at 400 and monitor the time)

After you’re done, serve the okra on top of the rice and it tastes amazing. Throw on some chopped cilantro to top it.
