For someone who loves Asian food and is constantly craving it, I would be spending way too much money on take-out. So I decided to experiment and make some at home, using flavors I love.
What you will need : Rice noodles ( I used 8.8 Oz and this recipe was for 2 people and had leftovers)
1/2 onion sliced thin and long
1 carrot thinly sliced
1/2 zucchini thinly sliced
1/2 bell pepper thinly sliced
1/2 cup chopped scallion
2 tablespoon vegetable or olive oil
3 teaspoons grated ginger root or 3 teaspoons ginger paste
2 cloves of garlic finely chopped
3 teaspoons sesame seeds
1/4th cup soy sauce
1/4th cup chilli garlic sauce
1 cup beef broth or any broth
3-4 basil leaves
Some chopped parsley and cilantro
Some lime
(**This is my vegetarian dinner option, feel free to throw in some protein of you choice, shrimp, chicken or sausage**)
How to – In a pot bring some water to boil. Make sure to salt the water. Add in the rice noodles and they should cook in about 5-6 minutes. Drain off the water and put aside.
In a pan or skillet, add oil and sauté the ginger, garlic and sesame seeds.. Add in the basil leaves too. Then add the onions. Add in soy sauce, chili garlic sauce. Let simmer on medium heat for about 5 minutes, and then add in in the rest of the vegetables. Sauté for about 5 more minutes, then add in your broth and put a lid on while the vegetables cook for about 7 minutes.
Throw in your rice noodles and mix it around until they have evenly soaked up the sauce. Squeeze a lime on top, and garnish with parsley and cilantro. Et voilà , you have some delicious rice noodles!
