Rice Noodle Soul Soup For A Rainy Day 🍜🥬✨🤩

It’s quarantine and it was rainy and all I wanted was a hot bowl of yummy soup with Asian flavours (always). So I decided to play around with what I had in the kitchen. 

What you will need 🌿🍜 : Makes 5 Servings 

– 4 cups chicken or vegetable broth 

1 package Rice noodles (8 ounce)

2 tablespoons olive oil 

– 1 teaspoons salt

– 2 tablespoons grater ginger 

– 2 cloves garlic minced 

– 1/2 cup soy sauce 

– 2 tablespoons chilli garlic paste

1/2 sliced white onion 

1 carrot sliced

– 1 steam of bok choy 

– 1 cup of sliced green onions/scallions 

3 teaspoons sesame seeds 

1 table spoon sesame oil 

– 1 teaspoon black pepper 

–  1 lime’s juice 

– Finely chopped cilantro 

How to : In a big pot bring 5 cups of water to boil, and add the rice noodles. Cook for 4-5 minute. Make sure to salt the water. Drain the water and set the noodles aside. 

In another pot, heat oil, add the garlic and ginger, sautés the white onion and carrots. Also add half of the scallions (save other half for topping later) Add the sesame seeds, soy sauce and chilli garlic paste. Cook for about 4 minutes on medium heat. 

Add the broth and the bok choy and cover with lid and cook for 15 minutes. 

To serve, add the rice noodles in your serving bowl and pour the broth on it. Top with sesame seeds, scallions and cilantro. Squeeze some lime on top.
