was craving brunch one Sunday afternoon but didnβt want to make the traditional breakfast I make at home. So I decided to play with some leftovers and eggs and boom π₯ – here we were with this deliciousness!
Ingredients π±: 1 cup day old cooked rice
– 4 cloves
– 1 tsp black pepper
– 1 tsp cayenne pepper
– 1 tsp cumin seeds or powder
– 1/2 medium white onion diced
– 1/2 can crushed tomatoes (28 oz)
– 1/2 cup bacon bits
– 1 cup crumbled feta cheese
– Handful of shredded mozzarella
– 4-5 large eggs
– Chopped parsley
How to : I used a cast iron skillet because itβs easier to sautΓ© and then bake the food.
SautΓ© your onions in the cloves, pepper, cayenne, cumin and salt. Add the rice and cook for 4 minutes on medium heat. Add in your tomatoes. Mix together. Cook for about 4 more minutes. Turn off the heat and add the mozzarella as much as you desire.
Crack open the eggs and bake in the oven at 400 degrees for about 20 minutes or until the eggs arenβt runny anymore.
Once you take out the dish, add the crumbled feta on top and parsley. Let cool for about 5 minutes before serving.
I ate mine with some Tabasco and it tastes great!
