Would you look at all those colours? It’s like summer in a bowl🤩
Ingredients 🌿🍣 : Makes two bowls
– 3/4th cups cooked white rice
– 1/2 lbs sushi grade tuna
– 1/2 cup soy sauce
– 3 teaspoons grated ginger
– 2 teaspoons sesame oil
– 2 teaspoons rice vinegar
– 2 teaspoons teriyaki marinade
– 1/2 chopped Thai pepper (optional)
– 1 cup chopped scallions or green onions
– 1/2 red onion chopped
– Some pineapple chunks
– 1/2 cup chopped lettuce
– 1 avocado
– Sesame seeds
– Chopped cilantro
– And some spicy mayo to drizzle on top
How to : For your tuna, cut into chunks and marinade with teriyaki sauce, soy sauce, sesame seeds, sesame oil, ginger and rice vinegar. Leave it in the fridge for 3-4 hours.
In a large dish, add the cooked rice, add the pineapple, onions, lettuce, tuna and avocado on top. Add the scallions, and sesame seed and squeeze the spicy mayo on top. Refer to my picture below for the plating!
It’s quarantine and it was rainy and all I wanted was a hot bowl of yummy soup with Asian flavours (always). So I decided to play around with what I had in the kitchen.
What you will need 🌿🍜 : Makes 5 Servings
– 4 cups chicken or vegetable broth
–1 package Rice noodles (8 ounce)
– 2 tablespoons olive oil
– 1 teaspoons salt
– 2 tablespoons grater ginger
– 2 cloves garlic minced
– 1/2 cup soy sauce
– 2 tablespoons chilli garlic paste
– 1/2 sliced white onion
– 1 carrot sliced
– 1 steam of bok choy
– 1 cup of sliced green onions/scallions
– 3 teaspoons sesame seeds
– 1 table spoon sesame oil
– 1 teaspoon black pepper
– 1 lime’s juice
– Finely chopped cilantro
How to : In a big pot bring 5 cups of water to boil, and add the rice noodles. Cook for 4-5 minute. Make sure to salt the water. Drain the water and set the noodles aside.
In another pot, heat oil, add the garlic and ginger, sautés the white onion and carrots. Also add half of the scallions (save other half for topping later) Add the sesame seeds, soy sauce and chilli garlic paste. Cook for about 4 minutes on medium heat.
Add the broth and the bok choy and cover with lid and cook for 15 minutes.
To serve, add the rice noodles in your serving bowl and pour the broth on it. Top with sesame seeds, scallions and cilantro. Squeeze some lime on top.
I know I usually post things mostly made from scratch, so this post maybe a little less like my usual ones. But here’s my ‘I am too tired to make a whole meal but don’t want to spend the $$ on pizza delivery’ night meal!
If you feel this struggle, here’s my easy tips to make a pizza real quick. (I do have a dough recipe that I every so often but this is specifically for those lazy nights, pls don’t judge me)
What you will need (per serving one pizza) : Ready-to-eat Naan (you can find this at most stores, its just an Indian flatbread that’s SO DELISH) Olive oil Ground black pepper Salt 3 tbs marinara sauce 3-4 tbs ranch dressing (hidden valley or one you prefer) 1 cup shredded mozzarella cheese A handful of shredded cheddar, parmesan or even ricotta cheese 1/4 cup chopped white onion Some bacon bits Parlsey to sprinkle on top
How to : Cover your naan with some olive oil evenly, and sprinkle a bit of salt and some pepper on it. Spread your marinara sauce and ranch on top. Throw on your cheese, onion and bacon bits. Sprinkle on the garlic.
What you will need : 2 table spoons olive oil 1lbs ground pork 3 teaspoons ginger paste 2 pods of minced garlic 2 thai green peppers diced (optional) 1/2 cup soy sauce 2 teaspoons dried ginger powder 1/4 cup white onion, chopped 1 cup green onions, chopped 1/2 cup chicken or vegetable or beef broth Some sesame seeds to sprinkle on top 1 cup rice Some chopped cilantro Salt and pepper to taste
How to – In a pan, heat the oil and sauté the onions, Thai peppers and garlic, add a pinch of salt, on medium heat. Once, the onions are soft, add the ground pork and ginger paste. Mix together and let it sauté for another 4 minutes. Add the soy sauce, ginger powder, and broth. Cover with a lid and let cook for 15 minutes. Then add the green onions and as many sesame seeds as you like. Cook for another 6 minutes. At this point you will smell the gingery fragrance off it!
Then you can serve this with white rice. And sprinkle some chopped cilantro on top. Let me know what you think!!
