Spicy Basil Rice Noodles

For someone who loves Asian food and is constantly craving it, I would be spending way too much money on take-out. So I decided to experiment and make some at home, using flavors I love.

What you will need : Rice noodles ( I used 8.8 Oz and this recipe was for 2 people and had leftovers)
1/2 onion sliced thin and long
1 carrot thinly sliced
1/2 zucchini thinly sliced
1/2 bell pepper thinly sliced
1/2 cup chopped scallion
2 tablespoon vegetable or olive oil
3 teaspoons grated ginger root or 3 teaspoons ginger paste
2 cloves of garlic finely chopped
3 teaspoons sesame seeds
1/4th cup soy sauce
1/4th cup chilli garlic sauce

1 cup beef broth or any broth
3-4 basil leaves
Some chopped parsley and cilantro
Some lime

(**This is my vegetarian dinner option, feel free to throw in some protein of you choice, shrimp, chicken or sausage**)

How to – In a pot bring some water to boil. Make sure to salt the water. Add in the rice noodles and they should cook in about 5-6 minutes. Drain off the water and put aside.

In a pan or skillet, add oil and sauté the ginger, garlic and sesame seeds.. Add in the basil leaves too. Then add the onions. Add in soy sauce, chili garlic sauce. Let simmer on medium heat for about 5 minutes, and then add in in the rest of the vegetables. Sauté for about 5 more minutes, then add in your broth and put a lid on while the vegetables cook for about 7 minutes.

Throw in your rice noodles and mix it around until they have evenly soaked up the sauce. Squeeze a lime on top, and garnish with parsley and cilantro. Et voilà , you have some delicious rice noodles!




Leftover Stir-Fried Egg Rice

This is the perfect use of leftover rice.. and its delicious.

What you will need : 2 cups of leftover white rice
1 table spoonpoon olive oil
1 diced white onion
1/2 cup soy sauce
2 minced pods of garlic
2 teaspoons sesame oil
2 eggs
red pepper flakes to taste
salt & pepper
1/2 chopped cucumber


In a pan, heat the oil and sauté the onion and garlic. Add the rice and soy sauce and let cook for 4 minutes. Throw in the sesame oil, salt, pepper and red pepper flakes. After mixing it well for about 2-3 minutes. Make a little space in the pan on the side and crack open two eggs and scramble them. Once cooked, mix with the rest of the rice.

Once you have plated it, add the cucumber with it and it’s delicious! Throw on some cilantro on top if you like!



Yoghurt Rice with Spicy Okra

This is a traditional Indian recipe, no modifications really. We call “curd rice” but it’s the same concept. And it is delish!!

What you will need : 1 cup of cooked white rice
1 cup low-fat plain yoghurt
1 tablespoon mustard seeds

2-3 cut thai green chillies,
2 table spoons olive oil or any oil
1/2 diced onion
1 tablespoon paprika
2 cloves diced garlic
Salt to taste


How to – In a bowl, mix the cooked white rice with the yoghurt and add salt.
In a pan, heat the oil, add garlic, chillies, onion, mustard seeds and sautée for 4-5 mins till the onion is golden brown on medium heat. Then throw it on the rice in the bowl, and add the paprika, mix well. And add adjust the salt accordingly. Yup, that is all.

What you will need – 1/2 lbs Okra
1 medium potato
2 tablespoons paprika
1 tablespoon turmeric
1 tablespoon garlic powder
2 tablespoons olive oil
1 tablespoon cayenne pepper
Salt to taste
Cilantro

For the okra, I chopped them up vertically, along with the potato. Then in a bowl mixed together the oil, cayenne pepper, paprika, salt, garlic powder and turmeric. Mix it well. And then used the air fryer at 400 degrees F to cook for about 12-15 minutes till it looked crispy. (You can also use the oven at 400 and monitor the time)

After you’re done, serve the okra on top of the rice and it tastes amazing. Throw on some chopped cilantro to top it.

Protein Packed Egg White Bites

Hi guys! I am back and I have this fun breakfast recipe, that’s healthy and delicious. It is also very easy and quick to make and you can freeze this if you make a lot.

This recipe I only made 8 egg white bites and so if you want more you can double the portions but that also depends on the size of the pan you use.

What you will need – 2 & 1/2 cups of egg whites (I bought the ehh white carton from the store)
1/2 cup diced ham or bacon (whichever protein you prefer or not)
1 cup arugula (you can use spinach if you’d like)
1 cup diced red bell-peppers (honestly throw in whichever veggies you prefer)

1/2 cup cheddar cheese
2 teaspoons garlic powder
A splash of whole milk maybe like 3 teaspoons
Salt and pepper to taste

Canola oil spray

In a bowl whisk together the egg whites, garlic powder, salt and pepper. Spray down the muffin pan to grease it well.
Add the egg whites halfway then fill with the veggies and ham or bacon. Add cheese on top. You don’t want to fill it to the rim with egg white because when they cook, they will rise and get fluffy.

Heat the oven to 300 degrees and bake for 25 minutes. ANNNND VOILA! They’re done!

Tater Tot Heaven Or Hangover Food?

This maybe a hangover meal and it’s so delicious. I baked some frozen tater tots and threw it in a dish with some other yummy-cheesy stuff. This recipe will 100 percent not be healthy, but that’s okay, every once in a while right?

What you will need- 1/4th of a bag tater tots baked
1/4th of a cup bacon bits
1 cup arugula
2 slices of kraft singles – American cheese
1 egg
Red chilli pepper flakes for taste (optional)

Bake the frozen tots and then place them in a long rectangular bowl, throw on a the slices of cheese and stick it in the microwave for 30 seconds, till the cheese melts.

Throw on the bacon bits and the arugula. Add the red pepper flakes. In a different pan, fry an egg and top it on your bowl.

Yup, that is all for your carb-y and may I say delicious hangover food.
