If you’re looking for a great appetizer, this is on my list of favorites.
What you will need : 1/2 lbs medium sized shrimp 2 to 3 limes 1 red or yellow bell pepper diced 1 cucumber diced 1 jalapeño diced as well 1 onion diced Cilantro Salt and pepper If it gets too spicy add some honey for a sweet and spicy flavor.
First, chop the shrimp into smaller pieces (not too tiny), dice the onions, bell peppers, cucumber and jalapeños. And add to a big bowl. Mix it all together while you squeeze lime juice in. Add salt and pepper to taste. Cover and store in the fridge for about 35-50 minutes.
And once done, you can serve it with crackers or just by itself, I ate mine with a tortilla and tasted great. Garnish with cilantro.
I didn’t have any avocado when I made this, but it’s a great addition!
This is a very simple and plain recipe that I love. You might find this at your local Chinese restaurant. Here’s a quick version of it I make at home.
What you will need : 2 boneless chicken breasts diced 1/2 cup onion diced 1 cup broccoli chopped 3 tablespoons ginger paste 2 tablespoons olive oil 1 tablespoons cayenne pepper 1 table spoon garlic powder 2 tablespoons soy sauce 2 tablespoons honey Salt and pepper to taste 1 cup rice 2 cups water
While you’re about to get started on the chicken, cook the rice in a pot. For 1 cup of rice, add 2 cups water, salt it. Cover and cook for about 15-20 minutes. Turn off the burner and then cover the lid for it to steam.
In a pan, heat up the oil and sauté the ginger, onion and add cayenne for about 3 to 4 minutes. Add the chicken and stir. Slowly add in the soy sauce and honey. Add pepper and salt to taste. And then throw in the broccoli. Cover with a lid and cook for 15-16 minutes on medium heat.
Once ready, you can serve with it the rice. That’s all. Enjoy!
This isn’t one of my traditional recipes because I didn’t really make any of these things, but more like I just plate them together.
But here goes because it’s a cute idea, right?
What you will need : For the drink, I use the simplest things 4 shots Vodka, 2 shots per drink ( I like em strong) 1 lime 2 La Croix, sparkling water ( I used Tangerine) 1 teaspoon salt 1/4th cucumber sliced
For the cheese board, I bought a sausage at Trader Joe’s but I have bought some salami at Target as well. Some of it is $5- $15 depending on what meat and flavors you like. Some cheese, I used Dutch Gouda Cheese from Trader Joes, a slice of which is under $10 Guilt-free Wheat Thins from Trader Joes or Kroger Some pickles on the board Honey Mustard Olives Jalapeños Nuts Apricot or any fruit jam or preserve
For the drink, In a big pitcher, add the la croix, vodka, squeeze half a lime, add chopped cucumber, salt. Stir and serve.

Ever have left over rice lying around in your fridge? I know I do and you’re wondering what to do with it. Well, I came up with this recipe senior year of college when I was in a rush (what’s new?) and all my friends and husband licked their bowls clean.
What you will need :1 1/2 cup white rice 3-4 tablespoons pesto sauce 1 diced onion 1/2 diced red bell pepper and 1/2 diced green bell pepper (doesn’t really matter, I like the colors) 2-3 tablespoons olive oil 2 tablespoons cayenne pepper 3 breakfast sausage patties (cooked, and yes I know whack!!! but try it) Salt and pepper to taste Chopped cilantro
Alright, ready to get your chef on? In a pan, heat up the oil, and then sautee onions, throw on a pinch of salt on there (my mom always said to, it helps the onions cook faster, so I do). After the onions are soft, about 3-4 mins in, add the bell peppers and add 3 spoons of the pesto, sautée for 2 minutes and then throw in the rice. Add the remaining 1 more spoon of the pesto. Add salt and pepper and cayenne. Mix together until the rice is green all over.
In a separate pan, cook some breakfast sausage patties or just sausage, for 7-8 mins until brown on each side and then break it down into little crumbles and throw it into the pan the rice is in. Garnish with chopped cilantro. And let me know if you liked it!
Seafood? Good. In a Taco Bowl? Even better! Yes. I live in Texas, if you didn’t know, now you do. I grew up in Bombay right by the ocean, and so naturally seafood is a staple. And who doesn’t love tacos? Seriously, we would have a problem if you said no. Anyway, here’s my version of the fish taco bowl.
What you will need : 2 cod fillets 2 tablespoons garlic powder 2 tablespoons onion powder 3 tablespoons ginger paste 1 tablespoon paprika 1 lime 2 tablespoons butter 1 packet of taco seasoning 2 tablespoons cayenne pepper 1 bag of frozen cauliflower rice (because healthy but you could add regular rice) 2 cups of coleslaw 2 tablespoons hot sauce more or less depending on your spice meter Honey to taste for the coleslaw Honey mustard, as much as you like 1 lemon Salt and pepper to taste Cut up pineapple or mango slices if you like Sour cream (optional)
How to – Grease your baking dish with some oil or cooking spray. Throw in the cod fillets and add the garlic powder, onion powder, ginger paste, cayenne and paprika. In a small bowl melt the butter in the microwave, and mix in half the packet of taco seasoning and mix. And pour on the fish. Sprinkle on some salt. Garnish with lime juice. Make sure you get the marinade on all sides and then bake at 400 degrees for 25 minutes.
Now for the coleslaw, in a bowl add the slaw and throw on some of the hot sauce, I use about 3 tablespoons but I like it spicy. Then add honey mustard to and salt. Depending on how sweet or spicy you want it, the amount of honey mustard that goes in would vary. Mix it all together and refrigerate until later.
When you’re ready to eat and the fish is done, throw the bag of cauliflower rice in the microwave to cook. And then in a big bowl, fill half a side with the cauliflower rice and the other half with coleslaw and then add the fish fillet on top, you can more taco seasoning ands even sour cream on top if you like. And I threw on some fresh cut cilantro and squeezed some lime. And then added cut up mango on my bowl.
I loved serving and eating it and I know this recipe is going to be a favorite for long.
